Chris Foley – Cocktail Creator & Curator/Events Manager

I started making cocktails when I was around 18 years old and still living at home. I’d taken an interest in the different smells and flavours of both spirits and liqueurs; some go so far as to say I had a minibar right there in my bedroom. I just used to mix cocktails for myself. Some from recipes, and some experimenting with whatever flavours I could find.

Then I started to ride my pushbike to friends’ parties carrying a backpack fully loaded with bottles of spirits and liqueurs to mix up a little for fun and get the party going. I was already my own mobile bar.

It wasn't long after, through word of mouth by friends, that I got a job managing a bar. This was the platform for me to really explore the tastes on offer in a fully stocked bar.

It was here that I found out what a true bartender is: a bartender is not just someone who serves wine from a cask or beer from a tap – the bar is the stage for many performances and the bartender is the host or the showman. He’s the well-known doctor, able to cure whatever ailment you may have. He’s the small-town priest who listens to your confessions. He’s the psychologist and psychiatrist. But above all else, he’s everyone’s friend.
